Ingredients (Serves 2)
2 x 180g chicken breasts
The grated zest and juice of 1 lime
2 tsps olive oil
½ tsp sea salt
½ tsp ground black pepper
½ tsp ground cumin
2 garlic cloves, minced
10g fresh coriander, finely chopped
1 lime or lemon, cut into wedges)

Preparation
Pound the thickest end of each chicken breast with a mallet, until the chicken is a fairly even thickness throughout
Place the lime juice, lime zest, olive oil, salt, pepper, cumin, garlic and half of the coriander in a large bowl and stir well
Add the chicken and stir well to coat
Cover and refrigerate for 30 minutes
Air fry in a single layer at 180˚C/350˚F for 6 minutes on each side, or until thoroughly cooked
Alternatively, add 1 tsp avocado oil to a skillet and cook over a medium flame for 6 minutes on each side, or until thoroughly cooked
Serve garnished with the remaining fresh coriander plus lime or lemon wedges
